Red Wine Reduction

This is a good recipe for a wine reduction,
Surprisingly delicious even when made with
wine that is a bit past drinkable.

Ingredients:
1 small onion, peeled and chopped
1 stalk celery, peeled and chopped
6 cloves garlic, peeled and chopped
1 small red bell pepper, peeled and chopped
1 tablespoon of bacon fat or olive oil
2 small tomatoes, chopped
2 tablespoons pot wine
1 bottle Cabernet Sauvignon or Zinfandel

Directions:
Sweat the onions, garlic, red bell pepper
and celery in bacon fat or olive oil over
low heat until throoughly softened.
Add the tomatoes, balsamic vinegar,
and port and reduce to a glaze
Add the wine and slowly reduce by half,
skimming fat and residue along the way.
Strain through cheese cloth and continue
to reduce slowly to about 1/2 cup.
