Spam Classic Rice Salad

This is a spam and rice dish with
Italian herbs, spices and flavors.

Ingredients:
2 cups uncooked long-grain white rice
9 green onions, chopped
1-1/2 teaspoons paprika
1/2 teaspoon ground cumin
1/4 cup extra virgin olive oil
2 (14-1/2-ounce) cans chicken broth
1 (12-ounce) can spam classic, cut into strips
1 (10-ounce) package frozen peas, thawed and drained
1 green bell pepper, cut into 1/4-inch strips
1 red bell pepper, cut into 1/4-inch strips
1 (3-1/2-ounce) package Sliced Pepperoni
1/2 cup chopped fresh parsley

Directions:
In 3-quart saucepan over medium heat,
cook rice, green onions, paprika and cumin
in oil until onions are tender. Stir in broth.
Cook over low heat 20 to 30 minutes or
until rice is tender and all liquid is absorbed.
Meanwhile, in large skillet over medium heat,
saute spam 4 to 5 minutes. Combine rice mixture,
spam, peas, bell peppers, pepperoni and parsley.
