Swiss Steak and Onions

Also called chicken fried steak and onions.
You pound flour into the beef and cook it.
This is a swiss steak version with onions.

Ingredients:
2 lb. round steak, cut in cut in strips 1 tsp. salt
1/4 tsp. black pepper 1/2 cup flour
3 tbs. margarine 2 onions, sliced
1 cup water 1 clove garlic, minced
1 bay leaf 2 tbs. parsley, finely chopped

Directions:
Cut round steak into strips.
Combine salt, pepper, and flour.
Coat steak strips with flour mixture.
Pound as much flour you can into meat.
Place butter in a heavy skillet,
add sliced onion and minced garlic.
Cook until tender. Remove and set aside.
Add a little more butter to skillet and
brown meat on both sides over medium heat.
Add water, bay leaf, and parsley.
Place onions on top of steak. Cover tightly,
cooking on low for 1 hour until meat is tender.
More water may be added if necessary.
Stir occasionally to prevent sticking.
