Ukrainian Pink
Christmas Salad

This colorful salad is traditionally
served at Christmas, but is a good
bean and beet salad for any occasion.

Ingredients:
1 package frozen baby lima beans, thawed
1 jar pickle spears, cubed (reserve juice)
2 cans sliced beets, cubed
8 scallions (a bunch), sliced
2 potatoes, boiled and cubed
Mayonaise, to taste
Juice from pickles, about 2 tbsp
2 pinches, chopped fresh dill
Fresh lemon juice, to taste
Salt and pepper, to taste

Directions:
Cut up all ingredients and mix together.
Let stand overnight in refrigerator
so flavors blend and salad turns pink.
Mix and serve slightly chilled with
main course or a appetizer.
Especially delicious when served
with smoked fish as first course.
