Wheat Berry Chili

Using wheat berries in a beef chili
makes for an intesting and good change
from the usual all beef chili.
I like the added flavor of the sugar.

Ingredients:
1 1/2 pounds lean ground beef
2 cups wheat berries
3 cups water
8 cups water
2 tablespoons chili powder
1 medium onion, chopped
1 28-ounce can chopped tomatoes w/juice
4 cups tomato juice
2 cups chopped celery
1/3 cup packed brown sugar
1/2 cup ketchup

Directions:
Soak wheat berries in 3 cups water overnight.
Drain, and place wheat and 8 cups
of water in large 6 quart pot.
Bring to a boil and simmer for 2 hours.
Drain wheat berries. Wheat berries will
have the consistency of cooked corn.
In a separate skillet, saute crumbled ground beef
and onions until cooked through.
Drain excess oils from ground beef
and place beef/onion mixture into
6-quart pot with drained wheat berries.
Add all remaining ingredients,
bring to a boil and then gently
simmer for at least 1 hour.
Top your bowl of chili with toppings,
such as sour cream, cheddar and green onions.
