Baked Potato Wedges

These are crispy on the outside
and creamy good on the inside.
There's no frying involved,
just a bit of olive oil and
some dried herbs and spices.

Ingredients:
4 russet potatoes, scrubbed clean
4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon chili powder

Directions:
Preheat oven to 400 degrees F.
Coat a baking sheet with olive oil.
Cut each potato into 8 wedges;
rinse with cold water and pat dry.
Arrange on prepared pan.
Sprinkle with seasonings.
Bake 40 - 50 minutes until
cooked through, turning and
seasoning with more oil and herbs.
Place under the broiler if you
wish more crispy potato wedges.
