This is a recipe that started out
for making an applesauce bread.
I felt like making a coffee cake,
and also had some bananas going bad,
and made a breakfast treat out of it.
The top browned nicely and the texture
of this cake is like a banana bread.
I topped it with some sprinkled white sugar.
It's nice and moist, great with cream cheese.
Really good sliced, buttered and grilled like
a grilled cheese sandwich on a grill pan.
Ingredients:
1/2 cup vegetable shortening
1/4 cup white sugar
1/4 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
3 ripe bananas
1/2 cup applesauce
cinnamon sugar
Directions:
Preheat oven to 350 degrees F.
Grease a glass baking dish.
In a mixing bowl cream together
the shortening and sugars.
Add eggs one at a time,
add vanilla extract and applesauce.
In a seperate bowl combine flour with
cinnamon, nutmeg, allspice and salt.
Add to mixing bowl and mix to combine.
Add bananas to bowl and mix to make batter.
Pour batter into baking dish and smooth out.
Sprinkle top with cinnamon sugar.
Bake for 30 to 40 minutes or until done.
