A BLT Sandwich using green tomatoes,
sounded like a recipe I'd like to try.
The bacon worked great with the
breaded and fried tomatoes.
I used Iceberg lettuce for the way
it holds up with a crispy crunch.
Ingredients:
2 green tomatoes
1 egg
2 tablespoons milk
1 cup flour, for dredging
2 cups bread crumbs
Canola oil, for frying
slices of white bread, toasted
8 slices of bacon, cooked
2 tablespoons mayonnaise
Iceberg lettuce
Directions:
Heat 1" of oil in a large skillet.
Slice to tomatoes 1/2" thick.
In a bowl whisk egg and milk
to make an eggwash.
Dredge tomato slices in flour,
then in eggwash, then in breadcrumbs.
Drop breaded tomato slices in hot oil.
Fry until golden brown, turning often.
Remove to drain on paper towels.
Assemble sandwich as you would for
making a BLT sandwich using bacon,
iceberg lettuce and the
fried green tomato slices.
With lots of tral mayonnaise.
Cut sandwich diagonally and serve.
