Mint ice cream is so very good.
Most recipes call for using a
drop or two of peppermint extract.
This is my recipe using fresh
picked mint leaves for flavor.
Ingredients:
1 pint heavy cream
1 pint light cream
1/2 cup milk
8 heaping tablespoons sugar
dash of salt
30 fresh mint leaves
Directions:
After picking the mint leaves,
wash them well and dry them.
Place in a small food processor
along with 2 tablespoons sugar and salt.
Pulse to chop up the leaves fine.
Add one drop of water and mix well.
Mixture will be brown in color.
In a bowl of a frozen ice cream maker,
that is running, pour in heavy cream,
light cream and milk.
Add food coloring and mint leaf suger.
Add in sugar and mix for about
25 minutes until soft ice cream.
If you want to add chocolate chips
to this now is the time to add them.
Remove to a covered container and
place in freezer for 2 hours.
