BLT and Cheddar
Bread Pudding

I like to make bread pudding using up
some day old stale bread and turning
it into something really good tasting.

Ingredients:
6 slices stale bread, quartered
4 pieces bacon, roughly chopped
2 tomatoes, halved and thickly sliced
Small bunch of spinach, roughly chopped
1 cup grated or crumbled cheddar cheese
8 eggs
1 cup milk
1 cup yogurt, plain
Salt to taste
Black Pepper to taste
1 tablespoon Dijon mustard

Directions:
Preheat oven to 350 degrees F.
Grease baking dish,
Fry bacon until crisp.
Scatter bread around dish
Place in baking dish the bacon,
tomato, spinach and bread
Whisk eggs, yogurt, milk, cheese,
Dijon, and salt and pepper together
and pour everything over the bread,
making sure everything gets covered.
Bake 30-40 minutes until custard is set.
