Crustless Zucchini Pie

With the garden giving us fresh zucchini,
I made this easy to make zucchini pie.
This tastes good and every body likes it.

Ingredients:
1 large onion chopped
1/2 cup vegetable oil
1/2 cup grated parmesan cheese
4 beaten eggs
1 tablespoon parsley
3 cups grated zucchini
1 cup Bisquick
1 cup shredded cheddar cheese

Directions:
Combine first 5 ingredients.
Stir in zucchini, Bisquick and cheese
Pour into 2 greased 9 inch pie plates
Bake on 350 degrees F.
for 35 minutes or until golden brown.
