A good recipe to cook eggplant,
warm from the oven and topped
with some tasty bread crumbs.
Ingredients:
1 medium eggplant, 1-1/2 cubes
1 medium onion chopped fine
1 garlic clove minced
1 green pepper diced
4 medium tomatoes
1/2 tsp turmeric
1 tsp. ground ginger
1/2 tsp. salt or to taste
1 tsp. sugar
1/3 cup cooking oil
Directions:
Cook onion, garlic, pepper in hot oil
until onion is tender.
Add cubed eggplant,
chopped tomatoes, and sugar.
Pour into buttered casserole.
Bake for 40 minutes at 375 degrees F.
May be topped with buttered bread
or cracker crumbs.
