Made with fresh ripe peaches and
topped with some whipped cream.
Ingredients:
1 1/2 Tbsp. cornstarch
1/4 c. brown sugar
1/2 c. water
4 c. peaches - peeled and sliced
1 Tbsp. butter
1 Tbsp. lemon juice
1/2 c. flour - sifted
1/2 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 Tbsp. butter or margarine
1 egg - slightly beaten
2 Tbsp. sugar
1 c. heavy whipping cream
2 Tbsp. honey
1/2 tsp. cinnamon
Batter: Combine flour, sugar, baking powder,
salt, butter, and egg and beat with a
spoon until batter is smooth.
Cobbler: Mix cornstarch, sugar, and water.
Add peaches and cook until mixture
thickens, about 15 minutes.
Add butter and lemon juice.
Pour into baking dish.
Drop spoonfuls of batter topping
on top of hot peach mixture.
Sprinkle with sugar.
Bake at 400 degree F. oven for 40 - 50 minutes.
Spiced Cream: Beat cream until thick
(make sure your beaters and bowl are chilled).
Add honey and cinnamon. Beat to mix.
