Microwave Polenta

I usually make polenta the old fashioned
way, in a sauce pan on the stove top.
One day I decided to try making
it in the microwave oven.
This is how you do it.

Ingredients:
2/3 cup yellow cornmeal
1/2 teaspoon salt
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 cup prepared spaghetti sauce, heated

Directions:
Combine 1-2/3 cups water, cornmeal
and salt in 1-quart microwave-safe bowl.
Cover; microwave on HIGH 6 to 8 minutes,
stirring every 2 minutes.
Stir in 2 tablespoons each mozzarella
and Parmesan cheese.
Sprinkle with remaining mozzarella cheese.
Microwave, uncovered, on MEDIUM (50%)
2 to 3 minutes or until cheese is melted.
Cover; let stand 5 minutes.
Serve with spaghetti sauce on the side.
