My Best Pasta Sauce

This recipe takes time to make
but once you taste the end result
you'll agree this is the best
pasta sauce you've ever made.

Ingredients:
1 carrot, peeled and sliced
1 celery stalk, sliced
1 onion, peeled and sliced
4 garlic cloves, peeled and smashed
1 cup chopped fresh fennel
4 cups water
1 teaspoon cayene pepper
2 tablespoons white sugar
1/4 cup red wine
1 tablespoon white vinegar
1 tablespoon salt
1/2 tablespoon black pepper
10 fresh tomatoes, chopped
1 tablespoon dried oregano

Directions:
In a large sauce pot add all
ingredients except tomatoes
and dried oregano.
Bring to a boil, lower heat
to simmer at least 1 hour.
Remove from heat and strain,
reserving liquid, return liquid
to pot and add tomatoes and oregano.
Bring to a boil, lower heat to
simmer 1 hour more, stirring often.
