Penne Pasta
Midnight Snack

I always like fresh cooked pasta,
this is a recipe I've made hundreds
of times when I need a quick fix of
freshly cooked pasta and tomato sauce.

Ingredients:
1 cup dried penne pasta
4 cups water
salt to taste
1 (28 ounce)can plum tomatoes
Herbs of your choice
Parmesan cheese, grated

Directions:
Place water in a soup pot,
salt and bring to a boil.
Add pasta and simmer 20 minutes.
Remove pasta to a bowl using a
slotted spoon, set aside.
Pour off the pasta water,
saving 1/2 cup in pot.
Put canned tomatoes with juices
in pot with water, season with
what ever herbs and spices you like.
Using kitchen shears cut plum tomatoes
in small pieces right in pot.
Simmer 20 minutes to cook down sauce.
Add pasta to sauce in pot and heat through.
Serve topped with grated parmesan cheese.
