Fresh Salsa and
Avocado Shrimp Salad

This is a quick to make salad
and there's no cooking involved.
Remember fresh ingredients is best.
Serve this shrimp salad with warm
corn or flour tortillas and lime wedges.

Ingredients:
1 lb large peeled cooked shrimp
1 cup diced jicama
1/2 cup refrigerated fresh salsa
1 Tbsp olive oil
1/3 cup chopped cilantro
1/4 tsp ground cumin
1 ripe avocado, sliced

Directions:
In a medium bowl put shrimp, jicama,
salsa, oil, cilantro and cumin ; toss to mix.
Add avocado; gently toss to mix.
Roll up in warm tortillas if desired.
Serve with lime wedges.
