Some days I just want to open up
a can of black beans and dig in.
This is the recipe I use to heat
them up just enough to enjoy them.
Ingredients:
1 Can Black Beans, Rinsed and Drained
1 1/3 C Tomato Juice
2 Cloves Garlic, Minced
1 tsp Cumin
2 T Olive Oil
1 1/2 tsp Salt
2 T Fresh Cilantro Chopped
Directions:
In a skillet, cook garlic and cumin
in olive oil over medium heat
until you can smell it.
Add beans, tomato juice, and salt.
Continually stir until heated through.
Just before serving stir in the cilantro.
