This is as close as I can come
to making a hot dog sauce that
is like Ben's chili sauce in D.C.
Ingredients:
3 pounds ground beef 85/15
1 cup water
1/2 cup tomato sauce
1/3 cup ketchup
1/3 cup yellow mustard
1/2 cup dried onion flakes
1 teaspoon turmeric powder
1 teaspoon allspice
1 teaspoon sweet smoked paprika
1/2 tablespoon salt
1/2 tablespoon pepper
1 teaspoon white sugar
1 teaspoon brown sugar
1 tablespoon chili powder
2 bay leaves
crushed red pepper flakes to taste
Directions:
Heat a soup pot to medium heat.
Add in the water and onion flakes.
Add in the ground beef, breaking
it up with a wooden spoon.
Stir in more water if needed.
Stir in tomato sauce, ketchup, salt, pepper,
turmeric, allspice, sweet smoked paprika,
sugars, mustard, and chili powder.
Add bay leaves and crushed peppers,
Bring to a boil.
Reduce heat to low; simmer 90 minutes,
remove bay leaves, using an immersion blender,
blend to reach a smooth consistency.
