Black Bean Sauce

This is a good black bean sauce for chicken.
I like to add grilled onions to the sauce
before processing and it really kicks
up the flavor, also more green onions.

Ingredients:
1 (15 oz.) can black beans
1 quart cold water
2 bay leaves
2 cloves garlic, peeled and minced
1/2 cup chopped cilantro
Salt to taste
Black pepper to taste

Directions:
Drain and rinse black beans.
Place beans in a large sauce pan,
and add all remaining ingredients.
Bring to a boil, then reduce the heat
and simmer, uncovered, for about 1 hour.
Add additional water if needed.
Remove bay leaves, then transfer
the bean mixture to a food processor.
Process well, adding water if
needed to make desired consistency.
