Cream of Shrimp Soup

This recipe makes a very good tasting
and velvety cream of shrimp soup.

Ingredients:
2 1/2 cups Shrimp, cut in pieces
1 Onion, peeled and chopped
1 Potato, peeled and diced
2 tbl Unsalted Butter
2 tbl Flour
1 cup water or Chicken Broth
3/4 cup Frozen Young Peas
2 tbl Parsley, minced

Directions:
Saute onion and potato in butter about
5 minutes or until onion is tender.
Stir in flour; cook 1 minute.
Gradually stir in water;
simmer until potatoes are barely tender.
Stir in milk and heat.
Add shrimp, peas, parsley and
salt and pepper to taste; heat thoroughly.
