This is a very good mellow flavored soup.
You can add what ever herbs and spices
to this and even some protien if desired.
A simple creamy soup for a winter day.
Ingredients:
1 small eggplant, peeled
4 plum tomatoes
1 can of condensed,
cream of celery soup
2 tablespoons olive oil
Directions:
In a soup pot add oil,
then add eggplant and stir.
Cook on high heat for 4 minutes.
Add celery soup, water and lower heat.
Simmer 20 minutes or so.
Use an immersion blender to puree soup.
Let cool 10 minutes abd serve.
