Fresh Raspberry
Banana Coffee Cake

With apple sauce and spices this is good.
The berries add a nice red speckled color.
A little sugar and cinnamon on top,
this is a moist and tasty coffee cake.

Ingredients:
1/2 cup vegetable shortening
2 large eggs
1 ripe banana
1/2 cup applesauce
1/4 cup white sugar
1/8 cup brown sugar
2 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg

Directions:
Preheat oven to 350 degrees F.
In a mixing bowl cream together the
shortening and the sugars, add eggs
one at a time while mixing.
Add vanilla, apple sauce, and banana.
In a seperate bowl combine the flour,
salt, baking powder, soda, nutmeg,
cinnamon, and allspice, add to wet
ingredients in mixing bowl, stir
scraping down sides of bowl.
Mix until a batter forms.
Pour into a baking dish and smooth out
evenly, sprikle top with cinnamon sugar.
Bake for 40 minutes or until a cake
tester inserted comes out clean.
