Breadcrumbs are a crunchy topping
for gratins and baked fish, and a
protective coating for fried food.
Soaked in milk, breadcrumbs lighten
meatballs and meatloaf considerably.
Toasting your own is easy to do.
Ingredients:
Day old bread, sliced
Directions:
Bake slices of white bread
in a 250 degree F. oven until bone-dry.
(Depending on how wet the bread is,
this can take up to an hour.)
Turn the slices occasionally
to help the moisture evaporate.
Once cooled, grind the bread
in a food processor into even crumbs.
