Minute Rice Pudding

Creamy rice pudding made with Minute rice.

Ingredients:
3/4 c. Minute Rice
2 3/4 c. milk
1/3 c. sugar
1/2 tsp. salt
2 slightly beaten eggs
1 tsp. vanilla
1/4 tsp. cinnamon

Directions:
Combine rice, milk, sugar and salt in saucepan.
Bring to a boil,stirring constantly.
Reduce heat, cover, and simmer 10 minutes,
stirring occasionally. Mix eggs, vanilla
and cinnamon in 1 quart casserole.
Slowly stir in rice mixture; blend well.
Place casserole in a pan of hot water.
Bake at 375 degrees F. for 25 to 30
minutes or until top is set.
Cool at least 1 hour before serving.
