Pawpaw Muffins

Pawpaw Muffins are a great way to use up
some of the fruit and the fruit can be
used as a fat substitute in the muffins.

Dry ingredients:
2 cups all-purpose flour
3/4 cup granulated sugar
1 Tbs. double-acting baking powder
1/2 ts. salt

Wet ingredients:
1 cup 2% milk
2 egg whites
1 ts. imitation vanilla
1 Tbs. vegetable oil
1/2 cup pawpaw

Directions:
Mix dry and wet ingredients separately,
then mix together with a wooden spoon.
Lightly coat muffin tins with
vegetable oil and pour in batter.
Cook at 400 degrees F. for 20 minutes.
