Perfect Roast
Chicken Thighs

I've made this chicken recipe
hundreds of times and it's always
one of the best roast chicken dishes.

4 chicken thighs
1 carrot, peeled and sliced
1 celery stalk, peeled and sliced
1 onion, peeled and quartered
2 tablespoons butter
salt to taste
black pepper to taste
herbs and spices to taste

Line a roasting pan with aluminum foil,
preheat oven to 350 degrees F.
Place carrots, onion, celery in
bottom of roasting pan.
Wash and pat dry chicken and place
into prepared roasting pan.
Salt pepper and season chicken.
Cover and roast 1 hour or until done.
