Making fresh mint vinaigrette is easy.
Use it on all different vegetables and
use it to perk up any leaf lettuce salad.
Directions:
Combine:
3 tablespoons finely chopped red onion,
2 teaspoons fresh lemon juice,
2 teaspoons grated orange zest,
1 teaspoon balsamic vinegar,
2 tablespoons raspberry vinegar and
2 tablespoons chopped fresh mint.
Whisk in 1/3 cup extra-virgin olive oil.
Season with salt and pepper to taste.
