I tried these just for fun
and was pleasantly surprised.
They were really very good!
Ingredients:
1 (14.5 ounce) can peeled,
and diced tomatoes with juice
1/4 onion, peeled and chopped
1/2 cup Italian dried bread crumbs
Black pepper to taste
3 tablespoons olive oil
Directions:
Place the tomatoes, onion and
bread crumbs into a large bowl.
Season with black pepper,
and mix thoroughly. Cover,
and let stand for about 15 minutes.
This will allow the bread crumbs
to soak up the juices from the tomato.
The mixture should set up
to be a stiff paste.
Heat oil in a large skillet
over medium-high heat.
Form the tomato mixture into patties,
and place in the hot oil.
Fry the patties, flipping only once,
until golden on both sides.
