White and Sweet
Potato Pepper Stew

I had some left over cooked russet and also
some sweet potatoes in the refrigerator.
Put them together in this good tasting
potato stew that you cook in the microwave.

Ingredients:
1 cup sweet potatoes, cooked
2 cups white potatoes, cooked
2 cups water
4 tablespoons tomato sauce
1 roasted red pepper, chopped
1/2 teaspoon black pepper

Directions:
Place sweet potatoes in a
food processor and pulse into a
small dice, remove to a glass bowl.
Repeat with white potatoes.
Add water, tomato sauce, red pepper
and black pepper to bowl.
Stir to combine and heat in a
microwave oven on low power for
15 to 20 minutes until heated through.
