Busy Day Roast Chicken

I make this on days when it seems
there's no time to cook anything.
You simply place the vegetables
in a roasting pan with the chicken
on top of them and walk away.
An hour later dinner is served.

Ingredients:
1 onion, peeled and quartered
1 carrot, peeled and cut up
2 potaotoes, peeled and cut up
2 celery stalks, cut up
2 garlic cloves, peeled
1 whole lemon, quartered
salt to taste
black pepper to taste
1 chicken, whole or pieces

Directions:
Preheat oven to 350 degrees F.
Line a roasting pan with aluminum foil.
Prepare vegetables and place in pan
along with lemon salt and pepper.
Wash chicken and pat dry then
place on top of vegetables.
Season with salt and pepper.
Cover and bake for 1 hour or until done.
