Can of Seasoned
Kale Mashed Potatoes

Kale to me is like cilantro you either
love it or can't stand the tastes.
If you like kale you'll love this dish.
Adding some seasoned canned kale
to plain old mashed potatoes makes
this a very good for you to eat side.
The green kale has a fine taste
that compliments the creamy potato well.
I like to serve this with Italian sausages.

Ingredients:
6 russet potatoes, peeled
1 (27 ounce) can seasoned kale
4 tablespoons unsalted butter
salt and pepper to taste

Directions:
Wash and cut up potatoes in pieces
placing them in a pot of cold water.
Rinse and re-fill pot with cold water
enough to cover potatoes by two inches.
Salt water to taste.
Place on stove and bring to a boil,
reduce heat and simmer 20 minutes,
or until potatoes are fork tender.
Drain and leave potatoes
in warm pot to dry a little.
Add butter and mash to
your desired consistency.
Add the can of kale with juice.
Stir to incorperate kale with potatoes.
The mashed potatoes will turn soupy.
Season with salt and pepper to taste.
Replace pot back on very low heat.
Let sit for 30 minutes the place
potatoes and kale into a strainer
over sink to drain excess water.
After water is drained place back
in pot to warm through and serve.
