This soup is simple enough to make,
tastes good and is also good on pasta.
Peel the zucchini if you prefer,
use a medium squash for smaller seeds.
Ingredients:
1 lb. Sweet Italian Sausage
3 Qts. canned low sodium beef broth
1 Tbs. olive oil
1-16 oz. can tomatoes
1 Medium Zucchini, chopped
1/2 cup red wine
Seasonings of your choice
Directions:
Crumble and brown sausage in
olive oil in a 4 quart pot.
Add zucchini and broth.
Add seasonings and simmer for 1 hour.
Add tomatoes and red wine.
Cook for 10 minutes.
Serve with hot Italian bread.
