Potato latkes aren't difficult to prepare.
Use a heavy iron skillet for best results.
Ingredients:
4 large potatoes
1 medium onion, grated
2 eggs, beaten
2 tbsp. of matzoh meal
1/4 teaspoon baking powder
1 tsp. of salt, then salt to taste
A dash of ground black pepper
Canola oil for frying
Directions:
Grate the potatoes on a fine grater.
Drain off the accumulated liquid.
Add all the remaining ingredients
to the bowl of potatoes. Stir.
In an iron skillet, heat half
an inch of oil until very hot.
Drop the mixture by spoonfuls
into the hot oil.
Flatten slightly with a spatula.
Brown on both sides.
Drain on paper towels
season with salt to taste
and serve immediately.
