Creamy Lemon Potato Salad

This recipe uses lemon Greek Yogurt to
give the potatoes a nice tart flavor.
A little bit differant and good tasting.
I used white potatoes but any will do.

6 white potatoes
1 tablespoon unsalted butter
1/2 teaspoon salt or to taste
1/2 teaspoon black pepper
1/2 teaspoon dried parsley
1 cup lemon Greek yogurt

Peel and cut potatoes for boiling.
Place in a pot and cover with cold water.
Bring to a boil, lower heat to simmer
for about 20 minutes or until fork tender.
Drain and leave potatoes in warm pot to dry.
Add butter,salt,pepper and parsley.
Let sit for 10 minutes then mash potatoes
but also leave most of them in chunks.
Add lemon flavored Greek yogurt and stir
to combine well. Serve warm.
