Better tasting than any store bought fish stix.
Easy to make and well worth the little effort
involved in battering and frying fresh fish.
Serve with a home made tartar dipping sauce.
Ingredients:
2 catfish fillets
1 cup flour
1/2 cup cornmeal
1 tablespoon sweet smoked paprika
canola oil for frying
salt for seasoning to taste
1/2 cup mayonaise
2 tablespoons pickle relish
Directions:
Preheat oil for fying in a skillet.
Cut catfish into 1" thick strips.
Dredge in flour/cornmeal mixture.
Fry until golden brown and done.
Drain on paper towels, season with salt.
In a bowl combine mayonaise with relish,
serve as a dipping sauce along with catfish.
