Baked Stuffed Potato Skins

Russet potatoes baked in the microwave oven,
cut in half and the centers scooped out.
Filled with a cheddar cheese mixture and
baked again this time in the big oven
until heated through and browned on top.

Ingredients:
2 large russet potatoes, rinsed clean
1 cup shredded cheddar cheese
2 tablespoons unsalted butter
1 tablespoon dried chives
1 teaspoon sweet smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:
Place potatoes in a glass bowl,
cook on high setting in a microwave
for about 8 minutes or until heated through.
Remove a let rest and cool to the touch.
Cut each potato in half lengthwise.
Use a spoon to scoop out the insides,
placing cooked potato into a mixing bowl.
Add cheese, butter, chives, paprika, salt
and black pepper and mix to combine well.
Use a spoon to fill each potato skin with mixture.
Place filled potatos on a baking dish and bake
at 350 degrees F. for 30 minutes or until done.
