Fresh beets are a great side dish.
Easy to prepare in a pot on the stove.
Ingredients:
6 fresh beets, trimmed
2 tablespoon apple cider vinegar
Directions:
Place the beets in a large saucepan
and add water to cover and vinegar.
Bring to a boil, reduce heat and
simmer until tender, about 45 minutes.
Place pot under running cold water
and rinse until beets can be handled.
The skins can now easily be peeled off
