A fine tasting spring time dessert.
Rhubarb is mostly water and cooks
up well usung a microwave oven.
All you have to do is peel it and
add it to some sugar and spices.
Great used as an ice cream topping.
Ingredients:
2 stalks fresh rhubarb
1/4 cup sugar
1/2 teaspoon cinnamon
1 tablespoon unsalted butter
zest of one lemon
Directions:
Wash and peel rhubarb,
cut into 1" slices and place in a
mixing bowl along with sugar,
ground cinnamon and lemon zest.
Melt butter in a glass bowl in microwave.
Add in rhubarb, cover and heat for about
6 minutes or until softened and cooked.
