These meatballs are great to serve as appetizers,
with spaghetti or any pasta for that matter.
Caramelizing the onions and toasting the spices
makes for a nice flavorful taste sensation.
Ingredients:
1 pound ground beef 85/15
1 pound ground pork
1 large egg, beaten
1 cup Italian flavored breadcrumbs
1/2 cup Pecorino Romano cheese, grated
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt or to taste
1 cup caramelized onions
1/2 teaspoon cumin seed
1/2 teaspoon coriander seed
1/2 teaspoon fennel seed
1/2 teaspoon red pepper flakes
1/2 teaspoon sweet smoked paprika
In a dry pan toast cumin, coriander
and fennel seeds over high heat.
As they start to get nice and aromatic
toss in red pepper flakes and continue
to toast for about 45 seconds to a minute.
Finely grind cumin seed, coriander seed,
fennel seed and red pepper flakes .
Mix ground spices with the smoked paprika.
In a mixing bowl thoroughly mix ground spices
with the ground beef, pork, egg, and bread crumbs.
Portion out and roll into meat balls.
Pan saute or bake the meatballs.
