Green Potato Salad

Microwaved fresh Kale is pared with
horseradish spiced crispy potatoes.
This is an easy to make side dish.

Ingredients:
8 cups kale leaves, torn
2 tablespoons prepared horseradish
1 medium shallot, minced
1/2 teaspoon ground black pepper
1/4 teaspoon salt or to taste
2 cups shredded potatoes, cooked
3 tablespoons extra-virgin olive oil

Directions:
Place torn kale in a large microwave-safe bowl,
cover and microwave on high setting until wilted.
Drain water from kale, then finely chop.
In a mixing bowl combine prepared horseradish,
shallot, ground black pepper and salt.
Add the chopped kale and potatoes.
Heat oil in a large saute pan over medium heat.
Add the kale mixture and cook stirring occationally.
Until potatoes begin to turn golden brown and crisp.
Remove green potato salad to a serving platter.
