Pork Chops in Mushroom Soup

My Grandmother used to make this,
I think she got the recipe from the
Campbell's soup company recipe file.
Although she probably came up with using
pancake mix to coat the pork chops.
The chops come out nice and tender.

Ingredients:
4 pork loin chops
sprinkle of salt
sprinkle of ground pepper
1/4 cup pancake mix.
1/4 cup olive oil
1 can cream of mushroom soup

Directions:
Preheat oven to 350 degrees F.
Preheat oil in a saute pan,
season the pork chops and
drege in pancake mix.
Place chops in saute pan and
brown on both sides.
Place pork chops in a baking dish
and spread the soup over them.
Cover baking dish, place in oven
and bake for 1 hour or until done.
