Roast Vegetables with Sausages

Root vegetables roast up to intense flavors.
Adding in a few Italian sausages makes this
a one pot meal and it's fantastic tasting.

Ingredients:
6 Italian sausages
1 onion, peeled and quartered
1 whole beet, rinsed clean
2 carrots, cut in serving pieces
2 celery stalks, in serving pieces
2 white potatoes, quartered
2 sweet potatoes, quartered
4 tablespoons olive oil
1 teaspoon salt or to taste

Directions:
Preheat oven to 375 degrees F.
Use a fork to prick the skins of the
Italian sausages a few times and place in pan.
Place prepared vegetables in roasting pan,
drizzle with oil ansd season with salt.
Cover pan and place in oven for 1 hour.
Remove pan and serve right out of the pan.
