Applesauce Chocolate Chip Cookies

Light cookies packed with chocolate chip flavor.
You add a cup of jarred applesauce to the batter
which keeps the cookies moist and tender crisp.
Take these out of the oven before you think,
they tend to get hard if let in for too long.

Ingredients:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup vegetable shortening
1 cup brown sugar
1/2 cup white sugar
1 large egg
1 cup prepared applesauce
1 teaspoon vanilla
2 cups chocolate chips

Directions:
Preheat oven to 375 degrees F.
In a mixing bowl combine flour,
baking powder, soda and cinnamon.
In a mixing bowl cream together the
shortening and the sugars the add in
the egg, vanilla and applesauce.
Mix well and then add the flour mixture
to the wet, scrape down the side of bowl.
Stir in the chocolate chips and drop by
teaspoonfuls on parchment lined cookie sheet.
Bake for about 8 minutes or until bottom is
just starting to turn brown, remove to cool.
