Reheating a Rotisserie Chicken

A store bought rotisserie chicken makes for a
fast and easy to eat chicken dinner at times.
But what does one do with a whole chicken that
you bought and it's just sitting in the refrigerator?
Crank your oven up to 500 degrees to crisp that skin.
Roasting on a bed of fresh carrots and onions in a
roasting pan for an hour or so, this is really good.

Ingredients:
2 teaspoons canola or olive oil.
1 onion, peeled and sliced
1/2 bag of store bought baby carrots
1 store bought rotisserie chicken
2 tablespoons brown sugar
2 tablespoons honey

Directions:
Preheat oven to 500 degrees F.
Place oil, onion and carrots in roasting pan.
Place chicken on top and pat on top brown sugar.
Drizzle with honey and bake for about 45 minutes.
Cut up and serve.
