I use celery and carrots to act as a roasting rack
placing chicken on top to bake until golden brown.
You can use chicken parts if desired in his method.
Ingredients:
6 stalks of celery
6 carrots, peeled
2 whole baking chickens
salt and black pepper to taste
Directions:
Preheat oven to 350 degrees F.
Arrange celery and carrots in pan.
Top with chicken and season to taste.
Bake uncovered for about 1 hour or until done.
