Chicken Thighs Baked on Onions

If you like crispy baked onions this is for you.
The juices from the chicken flavor the onions and
everything bakes up crispy brown and tastes great.

1/4 cup olive oil
6 onions, peeled
1 teaspoon ground black pepper
8 chicken thighs
1 teaspoon salt
1 teaspoon smoked paprika
4 cups cooked white rice

Preheat oven to 300 degrees F.
Line a roasting pan with foil.
Cut onions in half and place in roasting pan.
Season onions with black pepper to taste.
Arrange chicken thighs skin side up on top of onions.
Sprinkle olive oil over chicken and onions.
Season with salt, paprika and more pepper to taste.
Cover roasting pan and bake for 1 hour then remove
cover and let bake for another 30 minutes or so.
Let rest 15 minutes before serving with cooked rice.
