Potatoes & Beef on Toast

Similar in taste to a Shepherd's pie.
Here's a recipe to use up some
left over mashed potatoes the kids will love.
Mashed potatoes together with cooked beef
with chopped fresh tomatoes and any fresh herbs.
This makes for a good late summers day lunch.

Ingredients:
Left over mashed potatoes
1 pound cooked ground beef
1 fresh tomato, chopped
1/2 red onion, chopped
slices of white bread, toasted

Directions:
Mix the beef, tomato, onion and mashed potatoes
in a bowl and microwave until heated through.
Serve warm on top of a slice of fresh white bread.
