Hard boiled eggs cut in half then broiled
with a bread crumb and pepperoni topping.
These are a good make ahead appetizer.
Served at room temperature all night long.
Can you think of other tasty toppings ?
Ingredients:
12 large hard boiled eggs, peeled
24 foil muffin cups
24 thin sliced pepperoni
1/4 cup mayonnaise
1/4 cup dried bread crumbs
Directions:
After hard boiled eggs have cooled,
peel them and cut them in half crosswise.
Place them in muffin cups inside muffin tins.
Place one slice of pepperoni on top of each egg.
Spread 1/2 teaspoon of mayonnaise on pepperoni,
then cover with a dried bread crumb topping.
Place muffin tin under the broiler to brown the tops.
Served on a platter they can stay good all night long.
( You might have to do this in batches ).
( I only have one 12 cup muffin tin so...).
