Dried beans simmered for 8 hours
in a slow cooker to create tasty
cowboy style country baked beans.
This is a winner on a cold winter day.
Ingredients:
1 pound dried Northern/Navy beans
6 cups cold water
1/2 pound smoked bacon
4 yellow onions, peeled and sliced
1/4 cup tomato ketchup
1/8 cup barbecue sauce
1/8 cup dark molasses
1/8 cup dark brown sugar
1 teaspoon liquid smoke
1 teaspoon ground black pepper
4 cups water
Directions:
Place dried beans in a large bowl,
cover with 1" of cold water.
Let sit overnight to soak.
Drain and rinse beans then set aside.
In a large pot place bacon and onions
cook until onions get a golden color
on them and remove all to a slow cooker.
Stir in ketchup, bbq sauce, molasses and
liquid smoke flavoring, season with pepper.
Stir in dried and soaked beans then add in
enough water to cover beans by 2 inches.
Cook on low for 8 hours adding water if needed.
